Memorial weekend is here! Cue the swimsuits, bbq’s and boats. Nothing like a long weekend to encourage everyone to get together and eat. We have a simple to prepare, yet delicious snack to make you the hit of any get together. Trust us, this will be your new go to for any summer party to come.
What you will need:
- 10-12 cups of popcorn. Approximately two bags of plain microwave popped popcorn. Use more or less depending on the amount of sweet topping you like.
- 3 cups of mini marshmallows. Plus extra for sprinkling over mixture in the end.
- 4 T of butter
- Red, white and blue M&M’s
- Mini pretzels
- Red and blue candy sprinkles
How to prepare:
Start by popping the popcorn. Tip: we found plain (no butter) popcorn is the best to use as to avoid a soggy snack in the end. Once popped, spread out on two sheet pans, lined with parchment paper. Lightly salt.
Next, in a medium pot melt the butter over low to medium heat. Once melted, add the mini marshmallows. Stir often. As soon as the last marshmallow has melted, turn off heat and begin pouring over popcorn. The goal is a light drizzle over both pans, coating most kernels. You will want to work quickly as the mixture will set up as soon as it begins to cool. Using your hands or coated spatula, stir popcorn until most kernels are coated.
While the mixture is still tacky, you will want to add the rest of the ingredients so that they all stick together. Sprinkle over the pretzels, M&M’s, extra mini marshmallows and sprinkles. Once again, using your hands or spatula, lightly toss the mixture until it’s evenly distributed.
Let cool and set up for about 30 minutes. When the marshmallow mixture has hardened slightly, transfer to serving dish or individual bags. We found some darling patriotic party supplies for personalized serving.
If not serving right away, store in an air tight container to keep ingredients fresh and popcorn from drying out.
